I’m not sure I should really post my menu this week because it’s a short week for me! But maybe it will help me at least get a meal on the table for a few days.

Monday……..Quesadillas, and something to go with them but I need an idea
Tuesday…….Grilled salmon, veggies
Wednesday….church supper
Thursday……Baked chicken, but then again we might eat out this day!
Friday and following…..visiting kids for birthday party

Hmmm, I might like having a short week of cooking!

    Thanks for stopping by…..Quesadillas sound great!

    Southwestern Chicken Stew

    3-4 Chicken Breast cooked….and shredded..I do this the night before while I’m cooking…

    1 can of Rotel
    2 cans Kidney Beans
    2 cans of Chicken broth
    1 can whole kernel corn, drained
    1 can Diced tomatoes

    Mix together and cook on low 30 minutes to 45 minutes…..I make Mexican Cornbread with it….but corn chips and Monterary Jack Cheese shredded on top is a hit too…..

    I love easy weeks too, and you deserve it after the holidays and the crew being there. How about a salad with the quesadillas? Or do the corn and black bean salad I do, it’s good and more veggies 🙂

    Someone else posted this week that they were having yellow rice with their tostadas, so it would work with the quesadillas too!

    Gail, just tackle one room at a time on the painting. I bought some of those furniture sliders and they have been so handy on moving furniture around.

    what did you end up having with your quesadillas? i usually make plain cheese quesadillas & then just have a bowl of tomato soup or a salad on the side…

    I usually do veggie quesadillas with tons of stuff in them but added some chicken this time…child #4 that’s STILL home complained there wasn’t enough meat! I ended up doing salad because I have lots of romaine that I need to use; it was all good!
