I’m finding it hard to get back into a routine again after the holidays! I did make this recipe about a week or so ago and it was pretty good. Served it over pasta as the recipe called for; it seemed a little runny to me and I thought it might actually work better as a soup so I reused the leftovers and added some things to it to make it more of a soup the second time we had it. Broccoli & Beef Pasta

2 cups broccoli florets
1 medium onion, thinly sliced
1/2 tsp dried basil leaves
1/2 tsp dried oregano leaves
1/2 tsp dried thyme leaves
1- 14 1/2-oz Italian-style diced tomatoes, undrained
1 10-oz. can beef broth
1 lb extra lean ground beef or beef strips
2 cloves garlic, minced
2 Tbs tomato paste
2 cups cooked rotini pasta
3-oz. shredded Cheddar cheese or grated Parmesan cheese

Combine beef and garlic in large nonstick skillet cook over high heat 6 to 8 minutes or until meat is no longer pink. Strain in a colander to remove excess fat and drippings. Add beef mixture to slow cooker. Layer broccoli, onion, basil, oregano, thyme, tomatoes, tomato paste and beef broth in the stoneware. Cover cook on Low 6-8 hours.Serve over pasta and sprinkle cheese on top.

I believe I forgot to put the cheese on top so that might have helped! I think you could also use very lean ground white turkey instead of the beef if you like to do that kind of thing; sometimes I sub ground turkey for beef in dishes like this. This time I had extra lean ground meat that was like 98% fat free so I used that.

    This looks good! Did you use all of the ingredients as called for (fresh broccoli, regular ground beef, italian tomatoes) ?? Just wondering if you made any substitutions. I would love this but would have to be selective about when to feed it to my broccoli-disliking better half 🙂

    P.S. I am so out of my routine, especially with memes. I haven’t done a regular meme in a while and keep forgetting which ones are on which days. I totally forgot about Slow Cooking Thursday, thanks for the reminder!
