I’ve been gone for a week and it’s hard to get back in the groove of cooking! We are supposed to fly to Amelia Island for a business trip this week but I think that’s going to get cancelled due to the fact that we were gone last week.
Here is my tentative plan for the week. Visit Laura’s site for more menus or to play along yourself.

Monday…….leftover pork tenderloin, salad, broccoli
Tuesday…….salmon, veggies
Wednesday..church supper
Thursday…..on-the-go honey mustard chicken (new recipe), green beans
Fri/Sat………I’m leaving open in case I need to move one of the other meals to these days due to possible golf outing for hubby! Otherwise, I might grill burgers that we didn’t do last week or fix a pot of soup.

Did anyone try the cranberry salsa I posted about last week? We made it and it was so good; BIL loved it on turkey sandwiches also and it wasn’t hot at all because I only used one small pepper with all seeds taken out. Give it a try sometime!

    I want to hear how the honey mustard chicken turns out, I’ve been looking for a recipe like that. Sounds really good!

    I am definitely in a soup mood, fixed two pots last week (butternut squash and golden potato) and by the end of the week, it’s supposed to be cold and should be great soup weather. Definitely do one on Friday or Saturday!

    P.S. Sorry, you know I didn’t make that cranberry salsa. I didn’t even eat turkey, so I’m making one tomorrow!

    Thanks for leaving a comment! I posted the recipe for lentil stew that you mentioned. It really lends itself to creativity, I’ve never once followed the recipe exactly and it always turns out great!
