There is a farm in our area that’s been selling sweet corn for a couple of weeks and will have it for a few weeks more. I have heard from several people that it’s the best you will taste and I’ve been wanting some to put up in the freezer. Been told a few different ways to cook it and put it up so I’ve been anxious to try it but Don has been too busy to get it for me. A friend took pity on me I think and said they were going and did I want some! Of course I did! So I spent a few hours on Monday getting it ready to go in the freezer………cooked some for us Monday night and it was very good! Corn on the cob, yeah, summertime!
Here’s what it looked like when I got it:

They sell it in a crate that has about 48 ears in it for $12, pretty good I thought for fresh corn, already picked.

Our pastor, who is a good cook, told us that he is putting his in the freezer with the husks on it because he’s cooking it on the grill that way. Said he just cut each end off and then put it in ziplock bags and into the freezer it goes. The friends that picked it up for me said they shucked their corn first and put in ziplocks but didn’t blanch it or boil it first! This sounded way too easy to me! I’ve spent tons of time in the past blanching, then cooling off corn or whatever vegetables I was freezing. So I wanted to give it a try. They all said that they’d had no problems with it doing it this way. So I left about 12-16 ears in the husks, so they can be grilled if I want, and the rest I shucked and just bagged up for the freezer.

We went to eat with our friends last night, and one brought some of the sweet corn and cooked it in the microwave in the husks, for like 6 minutes…….it was really good that way too! And easy too, the husks and silks just kinda came right off. So when I pull mine out to cook it, I can also do it in the microwave if I don’t want to get the grill out or cook it on the stove. I think I want to get one more case to put up! I’ll need to organize the freezer better and get another spot open & ready for the rest of the corn.

    Cool, I didn’t know it came like that in the crate! We never go to farmer’s markets or fresh food stands and buy stuff like this, but I know it is probably a lot better than what you can get in the regular store. And, that’s cool, I didn’t know you could freeze it like that. I thought you’d have to cut it off the cob or something. We grill ours right in the husk, just remember to soak in water first, then we wrap in foil. We love it that way, on the grill, it sort of comes out slightly crunchy and roasted tasting.

    YUM, cook some for me next time we’re in your “neck of the woods” 🙂

    My parents always go down to Laural and pick the corn, then bring it home for us to put up. Oh my the childhood memories……Nothing like fresh corn:)

    We had fresh corn (from grocery) yesterday too ! Very tasty. I got all the silks out of it. Yummy. We live in corn country !
